I started with this inner motivation to improve my everyday cooking routine and select better food in the process. Then I started looking at the issue through a macro lense, which led me to focus on trying to improve our entire faulty food system.

When I dropped meat from my diet, I missed certain textures so I started thinking ‘how can we make that?’ So we did. This is a space that has only been improved on incrementally over the last hundred years or so, but we’re accelerating so much now.
