The project CONCEPT/0823/507 is implemented under the programme of social cohesion “THALIA 2021-2027” co-funded by the European Union, through Research and Innovation Foundation.

Project Summary: The overarching aim of this project was to conduct a preliminary investigation into the use of nanoemulsion gels fortified with specific bioactives of different polarities, such as B12, vitamin D, or omega-3 fatty acids, in plant-based meat alternatives to enhance both sensory and nutritional characteristics.

Such an application becomes a necessity as it is essential for food companies to create the next generation of plant-based foods with nutrient, digestibility, and bioavailability profiles that match or exceed those of animal-based foods. Moreover, there is a need to fortify plant-based meat alternatives with additional health-promoting ingredients not found in most animal products, like dietary fibers and nutraceuticals.
